Creamy Curry Cauliflower Soup

From Lifefood Recipe book (slightly modified). Great for the 14 Day Nutritional Cleanse.

Creamy Curry Cauliflower Soup

Tumeric has amazing antioxidant properties.

1 small organic cauliflower, cut into flowerets

1 red pepper

1/2 Avocado

2 garlic cloves

1/4 cup sweet onion

1/4 cup lemon juice

3 tablespoons olive oil

2 tablespoons curry powder

1/2 tablespoon turmeric powder

3-4 cups water (nutmilk makes a much richer soup)

Place all ingredients in a blender and blend on high for a smooth consistency.

Serve with a dollop of coconut butter on top and a few sprigs of parsley. Can also add some hemp seed to balance out the omega 6 of the avocado.
